Frankenslime Halloween Cookie Cups Recipe

My Halloween baking this year is brought to you by all things slimy and oozy. First of all, we had the Bloody Millionaire’s Shortbread, and now we’ve got the science experiment-looking Frankenslime Halloween Cookie Cups! But let’s be honest, the more gooey something is, the better it is, right? And that was exactly my thinking behind this recipe.

So you might be looking at these and thinking, “Olivia, why?” and I’ll be honest, I thought the same while I was making them. But they’ve turned out so fun that I just had to share them with you guys! Everyone loves slime and it just made sense in my head to fuse it with a Halloween cookie cups recipe!

My starting point was thinking about things I’ve never made before and I can turn them into something a little more spooky. And while cookies are one of my favourite things to make, I’d never actually made cookie cups before. There’s something really fun about them and they’ve got a bit more personality than your typical cookie. And once I’d settled on cookie cups, it was about making the centre more frightful. As I’d already done blood red this year, I was totally drawn to green and the idea of oozing slime. And the Frankenslime Halloween Cookie Cups were born!

Yes, they aren’t the prettiest things in the world, but Halloween isn’t a beauty contest. They taste absolutely fantastic due to the caramely light brown sugar I included, as well as the stick centre. I also added in a load of chocolate chips for that classic cookie texture and to add a bit more body to the cup structures.

I did cheat a little bit with the green caramel… I used Carnation and I have no regrets! I like making my own caramel, but I wanted an option that I knew would be able to hold its own. Sometimes my caramel is a little unpredictable – will it be super runny or will it set really hard? I’m not good at finding the sweet spot, so Carnation is the route I took. However, once you stir Carnation caramel, it loses its body a little, so it’s key to avoid mixing too much!

Ready to give your children or guests the chills? These Halloween cookie cups are filled with oozing green caramel slime that looks absolutely diabolical, but tastes delicious. Take a bite and get a fright!

Ingredients

  • 275g plain flour

  • 1 tsp bicarbonate of soda

  • 1 tbsp cornflour

  • Half tsp salt

  • 115g unsalted butter

  • 55g granulated sugar

  • 135g light brown soft sugar

  • 1 egg

  • 1 tsp vanilla extract

  • 200g milk chocolate chips

  • 3 tablespoons Carnation caramel

  • Green gel food colouring (I used Colour Splash Green)

  • Halloween sprinkles

Directions

  • Preheat your oven to 180C/160C fan, and grease and lightly flour 8 holes on a 12 hole cupcake/muffin tin.
  • Mix the plain flour, bicarbonate of soda, cornflour and salt in a medium bowl, and set to one side.
  • In a large mixing bowl, melt the butter, then whisk in the sugars for around 2 minutes until dissolved.
  • Add in the egg and vanilla, and whisk until smooth.
  • Add in the dry ingredients and chocolate chips, and mix together to form a dough.
  • Remove around 240g of the dough, wrap it in cling film, and pop it into the fridge.
  • While it’s chilling, take balls of your remaining dough and press them into your tin. Use your fingers or a rolling pin to press it down and shape it up the sides of the cavity. Once you’ve filled 8 cavities, pop the tin into the fridge.
  • In a small bowl, mix your Carnation caramel and green food colouring to create a slime. Try not to overmix it, but make sure the colour is consistent.
  • Remove your tin from the fridge and spoon your caramel into the dough cups until they’re about half full. Then using the 240g of dough, create lids for each cup and press them on top, squishing the edges together with your fingers.
  • Bake them in the oven for around 12-14 minutes, then allow them to cool fully in the tin.
  • Once they’re fully cooled, drizzle over the remaining caramel and top with Halloween sprinkles!

Notes

  • If you end up having more dough due to using a smaller muffin tin, feel free to use the remaining cavities and make more cups.
  • If you want to make your own caramel, go right ahead, but make sure it can hold its own shape.
  • You want the colour of your caramel to be consistent and even, but try not to overmix the Carnation caramel otherwise it will be too runny.
  • Make sure you don’t overfill your cookie cups – you could face some serious leakage!

I promise, once you’ve made one batch of these, people will ask for them over and over. They’re sweet, rich and very moreish – one is never enough. I recommend trying them out with a scoop of ice cream for a delightfully devilish dessert! And if the green is off-putting for you, try it out with red for oozy blood, or go a bit wild with something like purple. Be imaginative!
